The trick isn’t fancy equipment or silicone cups, it’s three small things: a fresh egg, a gentle swirl in the water, and a splash of vinegar. Freshness matters more than anything — an older egg has a looser white that spreads instead of holding its shape. If you’re not sure, crack the egg into a cup first: a fresh white clings tightly around the yolk, while an old one pools out thin.
The avocado here isn’t just spread on top — I mash it with a fork along with lemon juice and salt, keeping it a little chunky rather than smooth.
