Easy Tomato Feta Salad Recipe
Some nights you’ve got ten minutes and a fridge full of half-used produce, and that’s really all this salad needs. Crisp lettuce and halved cherry tomatoes form the base, and salty feta plays off their sweetness in a way that never gets old. The part that actually makes this dish is the dressing — instead of just pouring oil over everything, you whisk it with Dijon mustard and a proper balsamic glaze, so every forkful carries a little sharpness along with it.
I started adding canned peas to this years ago, almost as an afterthought, and now I can’t leave them out. They add just enough substance to call this a meal instead of a side, without weighing anything down — you still finish the bowl feeling like you ate something, not like you’re bracing for a nap after. A scatter of sesame seeds at the end gives you something to bite into besides lettuce.
This is the salad I make when I want dinner solved before I’ve had time to overthink it: no stove, one bowl for the dressing, five minutes of chopping. It holds up fine next to grilled chicken or fish if you want to build it into a bigger plate, but honestly, on a warm evening, it’s happy standing on its own.

Method of preparation
Build the base. Arrange the lettuce in a large bowl, halve the cherry tomatoes, and add them along with the drained peas and crumbled feta.
Dress and finish. Whisk the olive oil, Dijon mustard, and balsamic glaze together in a small bowl until smooth. Pour over the salad, toss gently, and finish with a scatter of sesame seeds if using.
Chef's Tips
- Pat the feta dry with a paper towel before crumbling it — wet feta waters down the dressing and dulls the salt.
- Whisk the dressing in a separate bowl and toss the lettuce in last, right before serving, so it stays crisp instead of wilting under the oil.
