Method of preparation
Salad base: Rinse the arugula and dry it thoroughly, then spread it evenly across a large serving platter or salad bowl. Rinse the cherry tomatoes and cut them in half or into quarters. Slice the mozzarella into bite-size pieces, or leave it whole if the balls are small. Scatter the tomatoes and mozzarella over the arugula, then add half of the olives (pitted work best).
Dressing: In a small bowl or jar, combine the olive oil and balsamic vinegar, then add the whole-grain mustard. Season with salt and black pepper to taste. Whisk vigorously until the dressing looks uniform and slightly thickened. Pour about half of it over the salad and toss gently until the leaves and tomatoes are evenly coated.
Plate and serve: If you tossed the salad in a bowl, divide it between plates. Top with the remaining olives, then the thinly sliced jamón serrano to taste, arranged in loose, ruffled ribbons or casually but neatly. Drizzle with the remaining dressing right before serving, and serve immediately while the arugula is still fresh and crisp.
Chef's Tips
- Dry greens. Water clinging to arugula dilutes the dressing and keeps it from coating the leaves. Use a salad spinner or pat the leaves dry between clean towels.
- Room-temperature ham. Pulling the ham from the fridge 10–15 minutes before serving softens the fat and lets the aroma open up.
