Ingredients

8 ingredients
1
3 pc (6 oz)
0.5 oz (15 g)
1.5 oz (40 g)
1 oz (30 g)
1 tbsp (15 ml)
To taste
0.5 oz (5 g)

Possible ingredient substitutes

ghee, which is more forgiving if your heat control isn't perfectly dialed in yet
frozen spinach (40 g), thawed and squeezed dry
goat cheese or a mild farmer's cheese for a similar tangy note

Method of preparation

01

Rinse and dry the spinach. Melt 5 g of the butter in a small pan and quickly wilt the spinach [⏱️ 1 min]. Set aside.

02

Crack the eggs into a bowl, add milk (if using), salt, and pepper. Whisk lightly with a fork — just until combined, not frothy.

03

Melt the remaining butter in a clean nonstick pan (8-inch/20 cm) over low heat.

04

Pour in the eggs. Immediately start dragging them continuously with a fork or silicone spatula across the pan, tilting it slightly [⏱️ 1–2 min] — the mixture should thicken evenly into fine, soft folds with no browning.

05

Once the eggs are mostly set but still slightly glossy on top, spoon the spinach and feta in a line down the center.

06

Remove from heat. Gently fold or roll the omelette using the spatula, then cover the pan for 30 seconds to finish cooking through.

07

Slide onto a plate seam-side down, scatter with chives or dill, and serve immediately.

Chef's Tips

  • Pull the pan off the heat the moment the eggs start to set — carryover heat will finish the cooking gently, keeping the center soft rather than letting direct heat push it toward rubbery.
  • Don’t salt the eggs ahead of time; salt draws out moisture and thins the mixture before it even hits the pan. Season right before pouring, or on the finished omelette instead.
