
Salmon Broccoli Pesto Pasta
Most pesto recipes ask you to build a sauce from scratch — basil, oil, nuts, cheese, all blitzed and balanced by feel. This one skips that step entirely, and the trick is broccoli.
Blanched broccoli blended straight into store-bought pesto turns a thin, oily sauce into something with actual body — it clings to pasta instead of pooling at the bottom of the bowl, and it cuts the richness of the oil without adding cream or flour to do it. It’s a shortcut that happens to produce a better result than the thing it’s shortcutting.
Salmon gets the same efficiency treatment: cubed small, seared hard for two to three minutes so the outside firms up while the inside stays barely opaque, then finished with a splash of lemon juice off the heat. That last step matters more than it sounds — the acid cuts through the fish’s natural fat and keeps the whole plate from tasting heavy, even eaten straight from the pan at 8pm.
Farfalle is doing real work here, not just filling space. Its ruffled edges and folded shape catch the thick broccoli-pesto blend far better than a smooth noodle would, so more sauce ends up on your fork instead of at the bottom of the pot. If you only have penne or fusilli on hand, either works for the same reason — anything with ridges or folds outperforms something flat.
This recipe is written for one, but it scales cleanly. Double the ingredients, keep the same searing time for the salmon (don’t crowd the pan or it’ll steam instead of sear), and the technique holds regardless of portion size.

- Scoop out about 50 ml (roughly a quarter cup) of pasta water before draining — the starch in it helps the sauce grip the pasta instead of sliding to the bottom of the bowl.
- Don’t leave the salmon in the pan past 3 minutes: pull it once the edges turn opaque and the center still looks slightly glossy — it’ll finish cooking from residual heat.
