Method of preparation

01

Oven and pan: Preheat the oven to 350°F (180°C). Line a loaf pan with parchment paper or grease it with butter.

02

Wet base: Melt the butter and let it cool slightly. In a large bowl, mash the bananas with a fork into a chunky purée. In a separate dish, whisk the eggs with the honey, then stir in the cooled butter and vanilla. Combine this with the mashed bananas.

03

Dry mix: In another bowl, sift together the flour, baking powder, cinnamon, and salt, and whisk briefly so the leavening and spices are evenly distributed.

04

Batter: Add the dry mix to the wet base in 2–3 additions. Gently fold with a spatula, scraping from the bottom up, until no dry streaks remain. The batter should be thick and slightly lumpy, so don’t beat it smooth.

05

Chocolate and pan: Add the chocolate chips and fold once or twice more. Scrape the batter into the pan and smooth the top.

06

Score the top: With a knife, cut a lengthwise slit about ½ inch (1 cm) deep down the center of the batter, then drizzle the olive oil (2 tsp / 10 ml) into it. The slit helps the loaf crack neatly as it bakes.

07

Bake: Bake for [⏱️ 40–45 min], until the top is golden. A toothpick or skewer inserted into the center should come out clean (streaks of melted chocolate are fine).

08

Cool: Let the loaf rest in the pan for [⏱️ 10 min], then lift it out and cool on a wire rack.
