If you’re hosting a dinner party this weekend, this is the pudding to make on Thursday evening rather than Saturday afternoon — most of the work here is hands-off chilling time, not active effort. Once the biscuit base is pressed into the tin and the filling is in the oven, there’s very little left to do beyond waiting, which makes it a genuinely relaxed choice for anyone entertaining.
The base comes together from crushed chocolate biscuits and melted butter, pressed firm and chilled while you whip up the filling. What sets a good baked cheesecake apart from a dry, cracked one is knowing when to stop baking: pull it out once the centre still has a gentle wobble when you nudge the tin, then let it finish setting slowly in the switched-off oven with the door ajar. Rushing this step with a blast of cold air is the most common reason a cheesecake sinks or splits down the middle.
The caramel sauce is where the Snickers character really comes through — dry caramelised sugar loosened with warm cream and butter, poured warm over toasted peanuts scattered across the chilled cheesecake top. It sets into a glossy, slightly chewy layer that cracks satisfyingly under a fork, playing off the soft filling underneath.
Make it the day before you need it: the flavours settle and the texture firms up beautifully overnight in the fridge, and a well-wrapped slice will hold its shape for several days after that.

Method of preparation
Bake. [⏱️ 45–50 min + 60 min in the oven + 4–5 hrs in the fridge] Bake at 160°C (fan 140°C) until the centre still has a slight wobble when the tin is nudged. Turn off the oven, prop the door open, and let the cheesecake cool inside for 1 hour, then chill in the fridge for at least 4–5 hours or overnight.
Make the caramel. [⏱️ 10 min] Heat the sugar in a heavy-bottomed pan over medium heat, stirring with a wooden spoon, until deep golden. Warm the cream separately and pour it slowly into the caramelised sugar, stirring constantly. Stir in the butter and salt, cook until smooth, then remove from the heat and let cool to warm.
